How Do US Sailors Stay Fed on an Aircraft Carrier?

The recent challenges aboard the USS Abraham Lincoln highlight the efforts the Navy goes to to keep thousands of sailors in the middle of the ocean fed for months at a time.

A deployed US aircraft carrier is essentially a floating city. America’s Nimitz- and Ford-class supercarriers have crews of 5,000 or more, split between sailors and aviation personnel. The logistical requirement of keeping any such carrier operational is immense. And while much is made of the attention given to the carrier’s aircraft or its nuclear reactors, one of the most complicated pieces of logistics is far simpler: making sure that everyone aboard the ship has access to three meals a day, every day, for months on end while in the middle of the ocean.

At three meals per person, 5,000 personnel means roughly 15,000 individual meals every single day, and potentially more when late-night and mid-watch meals and around-the-clock flight operations are considered. Over a 30-day period, an aircraft carrier must provide somewhere in the ball park of 450,000 individual meal servings. It’s not an exaggeration to say that the aircraft carrier operates as something like an industrial restaurant embedded inside a nuclear-powered airport!

How Much Food Does an Aircraft Carrier Carry?

Carrier food requirements are typically measured in tons. The food is stored within dedicated spaces aboard the carrier, including dry storage compartments, refrigerators, and freezers. Staples include enormous quantities of meat, poultry, fish, eggs, rice, pasta, potatoes, fruits, vegetables, bread products, and dry goods. 

As a back of the envelope calculation, 3 to 4 pounds of food and associated provisions per sailor per day, when multiplied across 5,000 people, means that roughly 15,000 to 20,000 pounds of food—around 10 tons—is used up every day. Over a month, this adds up to hundreds of tons of provisions moving throughout the ship’s food service system. And given that ships tend to stock up well ahead of time, an aircraft carrier could carry thousands of tons of food in advance of a long deployment.

The carrier has multiple “restaurants,” so to speak—there is not one giant cafeteria located in the middle of the ship feeding 5,000 people at once. Carriers contain multiple galleys and messes, which allow the crew to distribute the workload across the ship. Enlisted sailors generally eat in a large mess, while chief petty officers and officers have separate mess facilities.

Food service specialists work essentially around the clock, because the carrier itself never really goes to sleep. Flight operations, maintenance, and watch rotations continue through the night, which naturally creates demand for food outside conventional breakfast, lunch, and dinner schedules. Industrial-scale equipment allows hundreds or thousands of portions at a time.

Water Is Less of an Issue Than Food

One might imagine that carrying potable water for the thousands of sailors aboard the aircraft carrier would pose an equally daunting logistical challenge. In fact, one advantage of a nuclear aircraft carrier is that it doesn’t need to carry much fresh water, because it can produce potable water from readily available seawater—historically through distillation, increasingly through shipboard water treatment and desalination systems. That water supports not only drinking, but cooking, showers, laundry, and other shipboard requirements. Nuclear propulsion also provides enormous energy availability, making the carrier unusually self-sufficient when compared to most ships. But food cannot be manufactured aboard the ship, which makes provisions the one major component of the carrier’s logistical footprint that requires outside help.

How Are Aircraft Carriers Resupplied at Sea? 

Rather than constantly sending the ship back to shore for food, Military Sealift Command (MSC) logistics ships typically meet the carrier strike group at sea, carrying food, fuel, ammunition, parts, mail, and other supplies. During replenishments, ships steam alongside one another while supplies are transferred across cables. Helicopters can also conduct vertical replenishments, carrying pallets from the supply ship directly onto the carrier’s flight deck.

The system doesn’t always work well—the recent challenges aboard the USS Abraham Lincoln illustrate the ways that long deployments can impact a carrier’s food supplies—but in general the system works, giving sailors a ready supply of food and enabling them to focus on the mission at hand.
